So, I would like to convert some avi video files over to the PS3 using the highest quality converter method.

I see:
mpeg4 AVC 768kbps
mpeg2 TS 2mbps
mpeg4 SP 786kbps
mpeg1 2mbps
mpeg2 PS 2mbs

Which of these would yield the best/highest quality video conversion?

Ok the question is what exactly are you going for. There are two real choices in Video Compression Size or Quality. AVC I think the the accepted best quality for bitrate, I have not done any direct comparisons to know for sure.

One of the other things people forget is that with out a massive amount of skill and computer processor power, you can not get a better video image than what you start with, Also every time you compress you video even if it is to the same codec it loses quality (Kind of like VHS takes if anyone remembers those).So quality is also directly related to what your sorce is.

If you have a DVD of a movie and want to rip it to watch on your PS3 I don't think you even really need a program like this sense you can rip the mpeg2 video files off the dvd with a little work doing no conversions and there for no loss of quality. But then you are also talking about 4+gig of information for a movie.

Your normal Internet Download video is normally compressed in Xvid/divx. the PS3 dose not play those (With out using Linux but that is an other topic) It is also stored in a .AVI container that the PS3 dose not read. An other popular Container is .mkv and that is even harder to deal with from everything that I have seen. Some people on the Net are slowly getting all the encoding Kinks out of mass producing the new AVC mpeg4 videos, I know I have seen the .x264 on anime that is out there. but then it is still normally in the .avi/,mkv format and not the .mp4

Ok so I just mentioned Containers again. Basically a .avi/.mkv file and I think to a degree.mp4 can have what ever type of encoded video and audio you want. The extension tells your device (Computer/psp/ps3/etc) how data is arranged, and other information like what codec is used so that it doesn't have to spend time trying to figure that out on its own.

Ok wow that went on for a bit and I am not sure I gave more information. But honestly quality is all in the eye of the beholder. If you have a 20 gig PS3 format it so that 10gig is devoted to linux and the subtract the over head you have like 6gig not something that you would want to put a full movie on in mpeg2 even if it would be lossless from the dvd. so size would be an issue int hat case over quality. Or there is always the possibility that you replace your hard drive. and have a 120 drive or if you are truly insane went and did the desktop SATA stuff some people are doing and getting 500+Gig on there ps3. And those points Size dose not matter as much.

But I think most people would say that if you are going to be doing conversions of video use the avc it is basically the newest and the best that you can use on the ps3 at this point in time.
