options options

I have just downloaded v2 from using a previous version and i have to say that this seems completely different. I had not really got used to all the options in the other one before coming over here and a not of sections/options I dont understand what they do, perhaps someone can help,

I have various DVDs both widescreen and fullscreen and want to find out what the best default settings are for each type. My previous profile i was transcoding at 900kbps but i cannot see an option to change the bit rate, can some help please.
